Pork


Apricot Glazed Pork Steaks Stir together apricot preserves, orange liqueur and butter, simmer in a small saucepan until butter is melted. Place pork steaks in heavy plastic bag, pour 3/4 cup apricot mixture over to coat. Marinate at least 30 minutes. Grill over medium coals 20-30 minutes, turning once. Baste often with the marinade. Warm remaining apricot sauce and serve alongside meat

Barbecued Pork Steaks


Pound steaks with meat mallet. Season with garlic salt if desired.  For sauce, in a small bowl, combine remaining ingredients; mix well.

Place steaks on grill about 4 inches above medium-slow coals.  Cook about 8 minutes on each side.  Brush steaks with sauce and continue cooking 5 minutes more, turning and brushing with sauce.

Polynesian Barbecued Pork


Combine all ingredients except pork strips in crock pot; stir well. Add pork strips and stir to coat thoroughly. Cover and cook on low setting for 8 to 10 hours. Serve with a small dish of sauce on the side for dunking and a bowl of steamed rice.

Scalloped Potatoes and Ham


Slice potatoes and layer with onions and ham in a large casserole. (I cook onions in butter first.) Melt butter, add flour and cook until smooth and bubbly. Remove from heat, stir in milk, and reheat to boiling, whisking constantly. Cook 3 minutes.  Add cheese one cup at a time until it melts. Add remaining ingredients.  Pour over ham mixture and bake at 350 degrees for 45 to 60 minutes, until potatoes are done and top is browned.

Wiener Schnitzel

This is Omi's specialty


Dip cutlets into flour. Mix eggs and milk. Dip cutlets into egg-milk mixture. Carefully coat with bread crumbs, not too heavily. Let stand for 5 to 10 minutes to seal coating. Fry cutlets until browned on both sides, about 3 or 4 minutes. Turn cutlets several times during cooking.
Do not pierce. Remove cutlets from shortening with tongs and drain over pan for a few seconds before removing to absorbent paper.

Barbecue Beef Cups 

Preheat oven to 400 degrees. In a skillet, brown ground beef and pour off drippings. Stir in barbecue sauce and onion. Separate biscuits and place each biscuit in an ungreased muffin cup or a muffin tin. Press the dough up the sides to edge of muffin cup. Spoon beef mixture into cups. Bake 10 to 15 minutes or until golden brown. Sprinkle with cheese, return to oven until cheese is melted. Makes 10 beef cups.

Beef and Cheese Stuffed Manicotti

 

Cook manicotti shells as per directions on box. Set aside.
Fry together until brown, meat, onion and garlic.
Remove from heat. Add mozzarella cheese, eggs, salt and seasoning. Mix well.
Stuff beef mixture into shells. Place in 9 x 13 inch pan.
Pour spaghetti sauce over shells. Sprinkle with grated cheese.
Cover with foil and bake in 375 degree oven for 25 to 30 minutes or until sauce is bubbly

Beef Goulash

Fry the diced onion on the oil until it's golden yellow. Add the
beef which has been cut into small cubes, and the paprika. Simmer
for 1/2 hour. Sprinkle with flour, then slowly add the beef stock. Simmer another 1 hour then add the cubed potatoes to the soup and cook another 1/2 hour.

Cheeseburger Mac

A simple yet filling meal.

In large fry pan, fry hamburger till done, add onions and sauté until translucent. Add macaroni and cheese, cook over medium heat until cheese is melted.

Chinese Pepper Steak
This is one of my family's favorites. Serve over steamed rice with a green salad.

Mix brown sugar and soy sauce. Add steak strips.
Sauté onions and garlic.
Add Steak strips and cook 8 to 10 minutes.
Add celery and peppers. Cook 5 minutes.
Make a paste from cornstarch and water.
Stir paste into steak and pepper mixture.
Stir until smooth. Cover and cook 12 minutes.
Serve over steamed rice.

Chili Mac

Heat oil large Dutch oven over medium high heat until hot.  Crumble ground beef into Dutch oven and brown; stir in onion and green pepper. Cook until onions and green pepper are soft; drain well. Stir in remaining ingredients Cook over low heat 10 minutes. Salt and pepper to taste.  Serve with extra cheese sprinkled on top if desired.

  Italian Beef Casserole


Heat oven to 350ºF. Grease rectangular baking dish, 9 x13 inches. Fry hamburger with the salt,  pepper and garlic in 10-inch skillet over medium heat, stirring occasionally, until meat is brown; drain well.

Heat water, milk, butter, the onion and oregano to boiling in saucepan. Remove from heat. Stir in dry potatoes just until moistened. Let stand about 30 seconds or until liquid is absorbed. Whip with fork until fluffy. Spread half of the potato mixture on bottom of baking dish. Layer with beef and half of the tomatoes. Top with remaining potatoes and tomatoes; sprinkle with cheese.

Bake uncovered about 30 minutes or until hot and bubbly.

Teriyaki Kabobs


Combine soy sauce, honey, ginger and garlic. Mix well.  Pour over meat and marinate 4 to 8 hours, turning occasionally. Alternate meat on bamboo or metal skewers with water chestnuts, green pepper and pineapple chunks.  Broil or grill to desired doneness

Camper's Pizza


Cook ground beef and onion in well-seasoned 11 to 12-inch heavy skillet with heat-proof handle over medium coals* until no longer pink, stirring occasionally to break up beef. Remove beef mixture to paper towel; season with salt.  Pour off drippings, leaving skillet "greased". Separate crescent roll dough triangles; place in skillet, pressing edges together to form bottom crust and 1-inch rim up side of skillet. Spread half of pizza sauce over dough; spoon ground beef mixture over sauce.  Top with olives and bell pepper. Pour remaining sauce over all; sprinkle with cheese and oregano. Place skillet in center of grid over medium coals.  Cover well with heavy duty aluminum foil 20 to 30 minutes or until crust is lightly browned.

*To check temperature, cautiously hold hand about 4 inches above coals.  Medium coals will force removal of hand in 4 seconds.

Chili Kielbasa Kabobs

Really good, really spicy kabobs. We like these with Hobo Potatoes. But of course we like ANYTHING cooked on the grill with Hobo Potatoes.
 


Wisk together apple juice, chili seasoning mix and honey in a small sauce pan. Cook over medium heat 2-3 minutes, or until thickened.
Alternate meat and vegetables on skewers. When ready to Barbecue, place kabobs on grill over medium heat. Cook 6 to 8 minutes until sausage is heated through, brushing with sauce while grilling.
Heat remaining sauce and serve with Kabobs

Deluxe Hamburger


In a small bowl, mix together the mayonnaise and the brown mustard. Set aside. Grill the face of each of the buns on a griddle or frying pan over medium heat. Roll the ground beef into a ball and pat it out until it's approximately the same diameter as the bun. Lightly salt and pepper the burger. Cook meat on hot griddle or frying pan for about 5 minutes per side or until done.
Put mayo/mustard mixture on one side of the bun. Add your meat, cheese, tomatoes and lettuce. Put the Ketchup and onion on the other half of the bun, squish together and enjoy.
Makes one very tasty hamburger

Hot Dog Smores

This is Joe's Favorite meal.


Slice hotdogs lengthwise 3/4 of the way through. Put a slice of cheese in each hotdog and wrap the hotdog with the bacon.
Broil hotdogs for 5-8 minutes, or until the bacon is cooked and cheese is melted.

Jalapeno Cheeseburgers
 

In a medium bowl, combine ground chuck, peppers and chili powder, mixing lightly and thoroughly. Shape into six 1 inch patties. Place on grill over medium coals or heat. (or fry in a fry pan) Grill uncovered 14-16 minutes until no longer pink, turning once. During the last one minute sprinkle each patty with 2 tablespoon of cheese. Place on buns with a tomato slice. Add your favorite condiments and serve.
